Sourced from Tartary Buckwheat kernels grown in Yunnan’s highlands—high altitude, strong sunshine, and noticeable day–night temperature shifts help bring out a clearer grain character and a cleaner toasty aroma. The mature kernels are small and naturally triangular, often deep brown in color. We select plump, even kernels and roast them with gentle temperature control to slowly draw out a warm, toasted grain scent—never burnt or bitter. The brew turns a clear golden liquor with a smooth, rounded mouthfeel: a simple, clean grain infusion with nothing added.
